1 Toss the courgettes in a large bowl with 4 tbsp olive oil and season well. Lay the slicesin a single layer on a baking tray and cook under a hot grill until well browned on one side. Leave to cool.
2 Preheat the oven to 180°C.
3 Heat the remaining oil in a large pan. Add the leeks and cook for 5 minutes over a low heat until softened.
4 Remove from the heat, add the spinach and stir until wilted. Add the Galbani® Ricotta, eggyolks, Galbani® Grana Padano, cream and nutmeg. Season to taste and stir well.
5 Place half the mixture in the bottom of a 1½ litre shallow ovenproof dish. Top with half the courgettes, followed by the remaining mixture and finally, the remaining courgettes.
6 Lay the Cricket St Thomas Capricorn Goats Cheese slices on top.
7 Place on a baking tray and cook in the preheated oven for 45-50 minutes, or until browned and bubbling.
