Toss the courgettes in a large bowl with 4 tbsp olive oil and season well. Lay the slicesin a single layer on a baking tray and cook under a hot grill until well browned on one side. Leave to cool.

Preheat the oven to 180°C.

Heat the remaining oil in a large pan. Add the leeks and cook for 5 minutes over a low heat until softened.

Remove from the heat, add the spinach and stir until wilted. Add the Galbani® Ricotta, eggyolks, Galbani® Grana Padano, cream and nutmeg. Season to taste and stir well.

Place half the mixture in the bottom of a 1½ litre shallow ovenproof dish. Top with half the courgettes, followed by the remaining mixture and finally, the remaining courgettes.

Lay the Cricket St Thomas Capricorn Goats Cheese slices on top.

Place on a baking tray and cook in the preheated oven for 45-50 minutes, or until browned and bubbling.
