    Ingredients


    • Brie crémeux

    • 120g CST Brie (rind removed)

    • 220g Double cream

    • 100g Milk

    • 2g Agar

    • Seasoning

    • Fruit Salad

    • 2 Nectarines

    • 2 Plums

    • 50g Grapes

    • 4 Figs

    • 10g Olive oil

    • 10g Honey

    • 10g White Balsamic

    • Garnish

    • Brie Rind

    • Neutral oil

    • Grilled Sourdough

  • Method

    • 1 To make the Brie Crémeux, remove the rind from the Brie and place it to one side.

    • 2 Place all ingredients into a pot and bring to a boil, ensuring the cheese is as melted as possible.

    • 3 While hot, blend until a smooth consistency, adjust seasoning, then allow to cool.

    • 4 Once cooled, blend again to whip up, then place in a piping bag until needed.

    • 5 For the salad, slice the fruit then drizzle with olive oil, vinegar, honey, and seasoning. With a blowtorch, char the fruit until warm and blistered.

    • 6 Next for the Garnish, place Brie rind on a baking tray and spray with oil, roast at 180°C for approximately 20 minutes until crispy.

    • 7 Grill the sourdough bread until charred on both sides.

    • 8 Finish with Brie Crémeux in the centre of the plate, followed by the fruit salad. Garnish with crispy Brie rind and grilled sourdough.
