To make the Brie Crémeux, remove the rind from the Brie and place it to one side.

Place all ingredients into a pot and bring to a boil, ensuring the cheese is as melted as possible.

While hot, blend until a smooth consistency, adjust seasoning, then allow to cool.

Once cooled, blend again to whip up, then place in a piping bag until needed.

For the salad, slice the fruit then drizzle with olive oil, vinegar, honey, and seasoning. With a blowtorch, char the fruit until warm and blistered.

Next for the Garnish, place Brie rind on a baking tray and spray with oil, roast at 180°C for approximately 20 minutes until crispy.

Grill the sourdough bread until charred on both sides.

Finish with Brie Crémeux in the centre of the plate, followed by the fruit salad. Garnish with crispy Brie rind and grilled sourdough.
