    • 6 Leerdammer Original Slices

    • 400g pork mince

    • 20g breadcrumbs

    • 1/2 fennel bulb, chopped

    • 1/2 red onion, chopped

    • 1 green chilli, deseeded and finely chopped

    • 1 tbsp flat leaf parseley, finely chopped

    • 1 tbsp creme fraiche or natural yoghurt

    • 2 garlic cloves

    • 1/2 tsp dried red chilli flakes

    • 1 tsp coriander seeds

    • 1 tsp fennel seeds

    • 2 sprig thyme leaves

    • 1 tbsp dijon mustard

    • 1/2 tbsp lemon juice zest

    • Handful baby gem lettuce

    • salt

    • pepper
