    Ingredients


    • 350g Ricotta

    • 150g Whipping Cream

    • 80g Icing Sugar

    • 50ml Dark Rum

  • Method

    • 1 Put all of the ingredients into a bowl and whisk together by hand or with a blender until smooth.

    • 2 Adjust the sugar and rum to your taste. Serve chilled in either 6 ramekins or glasses.

    • 3 Top with your choice of fruit, and some crushed Amaretti biscuits.

    • 4 Raspberries or other soft fruit

    • 5 Handful of Amaretti biscuits
