1 Blanch the broccoli until part cooked and refresh in cold water.
2 To make the whipped ricotta, place ricotta in a stand mixer and whisk until light and airy.
3 Fold in lemon zest, seasoning, Galbani Gran Gusto, grated garlic, honey and leave in the fridge until needed.
4 Heat a grilled pan until smoking hot, drizzle the broccoli in oil and sear until cooked and slightly crispy.
5 Garnish with more Galbani Gran Gusto grated and dill oil.
