    Ingredients


    • 5 Tenderstem spears

    • 30g Galbani Gran Gusto, grated

    • 5g Dill oil

    • 125g Galbani Ricotta

    • 1/2 Lemon zest

    • 1 Garlic

    • 5g Honey

    • 5g Neutral oil

    • Seasoning

  • Method

    • 1 Blanch the broccoli until part cooked and refresh in cold water.

    • 2 To make the whipped ricotta, place ricotta in a stand mixer and whisk until light and airy.

    • 3 Fold in lemon zest, seasoning, Galbani Gran Gusto, grated garlic, honey and leave in the fridge until needed.

    • 4 Heat a grilled pan until smoking hot, drizzle the broccoli in oil and sear until cooked and slightly crispy.

    • 5 Garnish with more Galbani Gran Gusto grated and dill oil.
