Remove the stalk from the mandarins and cut into 6 and place in a large heavy Based saucepan along with the water, salt and sugar

Slowly bring to the boil, reduce to a simmer and cover

Cook for 40minutes until the mandarins are soft, I use a Thermomix to blitz the entire contents of the pan

Slowly add the cubed President butter allowing each cube to be fully incorporated before adding more

Then slowly drizzle in the beaten egg yolk. No need to strain, just add straight into jars to cool then keep in the fridge. Great served with French Toast
