  • Ingredients


    • 90g President butter

    • 6 Large Organic Free-Range Egg Yolks 

    • 200g Granulated Sugar

    • 6 Mandarins

    • 200ml Water

    • Pinch of Salt

  • Method

    • 1 Remove the stalk from the mandarins and cut into 6 and place in a large heavy Based saucepan along with the water, salt and sugar

    • 2 Slowly bring to the boil, reduce to a simmer and cover

    • 3 Cook for 40minutes until the mandarins are soft, I use a Thermomix to blitz the entire contents of the pan

    • 4 Slowly add the cubed President butter allowing each cube to be fully incorporated before adding more

    • 5 Then slowly drizzle in the beaten egg yolk. No need to strain, just add straight into jars to cool then keep in the fridge. Great served with French Toast
